Sometimes I crave for something sweet and this time I kept thinking about a cheesecake but I didn’t want to bake an entire cheesecake, so I start googling to see if I could find an easy, fast and smallest recipe of this delight.
What I found at The Home Journalist blog was so very yummy that I had to share this with everyone!
This no bake cheesecake is made in mason jars and you can even prepare some and take it with you to have on your lunch break, and believe me, everyone around you will want to have a taste of your dessert 🙂
So here’s the recipe:
1 1/4 cups of Graham Crumbs (I used digestive crackers)
3 tbs of Butter, melted
1/8 tsp of Cinnamon
2 tbs of White Sugar
8 oz of Cream Cheese
1/2 cup of Sweetened Condensed Milk
1 tbs of Lemon Juice
1 tsp of Vanilla Extract (I didn’t used this because I’m not a lover of it!)
3/4 lb of (10 large) Strawberries, chopped
1/2 cup of Chocolate Chips
For the Graham Crust:
Pour the crumbs and sugar in a bowl and mix. Add the melted butter and stir well. Set aside.
For the Cheesecake Filling:
Pour the cream cheese in a bowl and beat with an electric mixer on medium-high speed. Add the condensed milk gradually and continue beating, now lowering some speed. Then mix the lemon juice and vanilla and beat until smooth.
Now set it up:
Pour half of the mixture of crumbs in the 5 mason jars and add the chocolate chips. Then fill the mason jars with the mixture of cream cheese and top with some of the strawberries. Pour the rest of the crumbs and top with the remaining strawberries.
Let it cool in the refrigerator for 2 hours.
As this is a dessert made in mason jars it’s not only ideal to take it to your lunch, but also for a picnic, to the beach, etc.
