I love to cook on Saturday nights, and one of the meals I make quite often are the famous Bruschettas!

Bruschettas are an Italian antipasto made with grilled bread rubbed with garlic, and topped with olive oil and salt. For the topping you can make it with cheese, tomato, you can also make it with mushrooms or bacon… just use your imaginaton!

This recipe that I show you here is the from the website Come Sano and it’s very simple.

Bruschetta Capresse

Ingredients

3 pieces of bread (baguette type)
2 oz of mozzarella cheese
1 tomato
Dried oregano
6 leaves of fresh basil
1 tablespoon of extra-virgin olive oil
Salt to taste

Instructions

Chop the tomatos into cubes and set aside.
Toast the bread and put it on a tray to go in the oven. On top of the bread put the mozarella cheese and place it in the oven (medium-high) until melted and toasted.
Mix the diced tomato with olive oil and salt.
When the bread with cheese are ready, take it from the oven and pour on top of each piece of bread the seasoned tomato. Then spread over it the oregano and the basil and serve it immediately.

 

So, as I told you above you can put whatever  you want as a topping. I usually make this with cheese and tomatos, but I also have done this with smoked salmon and cheese, mushrooms, chopped onions and cheese… I always make this with cheese because I loooove grilled cheese! And if you rub the bread with garlic will be simply delicious!
