As the weekend approaches and the plans here are finishing the orders and the new handmade items I have in my hands, so I can list them in my online shop (NOTON by Raquel – for those who haven’t heard of it go check it out, you won’t regret it!) I’m starting to look for some sweet dessert to sweeten up my weekend, and what made me start drooling was this Chocolate Pie that I found on myrecipes.

And here’s the recipe:

Ingredients

Crust:
40 graham crackers (10 full cracker sheets)
2 tablespoons sugar
2 tablespoons butter or stick margarine, melted
1 large egg white
Cooking spray

Filling:
2 cups fat-free milk, divided
2/3 cup sugar
1/3 cup unsweetened cocoa
3 tablespoons cornstarch
1/8 teaspoon salt
1 large egg
2 ounces semisweet chocolate, chopped
1 teaspoon vanilla extract
1 1/2 cups frozen reduced-calorie whipped topping, thawed
3/4 teaspoon grated semisweet chocolate
 
 
Instructions

For the Crust:
Place the crackers in a food processor and process until crumbly. Add 2 tablespoons of sugar, butter, and the egg white, and pulse until moist. Press the crumb mixture into a 9-inch pie plate coated with cooking spray.
Bake it at 350°F (175ºC) for 8 minutes, and let it cool on a wire rack 15 minutes.

For the Filling:
Mix 1/2 cup milk, sugar, unsweetened cocoa, cornstarch, salt and the egg in a large bowl, stirring with a whisk.
Heat 1 1/2 cups milk in a heavy saucepan over medium-high heat until tiny bubbles form around edge (do not boil). Then remove from heat. Gradually add hot milk to the sugar mixture, stirring constantly with a whisk. Return the milk mixture to pan. Add the chopped chocolate and cook over medium heat until thick and bubbly (about 5 minutes), stirring constantly. Reduce heat to low, and cook it 2 minutes, stirring constantly. Remove from heat and stir in vanilla. Pour into the prepared crust and the cover surface of filling with plastic wrap.
Chill it for 3 hours or until it’s cold. Remove the plastic wrap and spread the whipped topping evenly over filling. Sprinkle with grated chocolate.

 

And now here I am, waiting for Saturday so I can make this pie that looks so delicious! 🙂
